Let's start with steak

For some reason I have been told repeatedly that I should do a food blog, which I think is frankly ridiculous, as there are many better cooks out there. Oh well, here I am adding to the noise and hopefully someone can find some inspiration. A little background, I am a massage therapist and I run my own business, I am married and my husband is working on his master's degree, I have three boys who are on the autism spectrum, five cats, and one dog. My life is a little busy, cooking it becomes my moment of zen. My kitchen is terrible (hence the name of the blog) I have approximately 2 1/2 feet of counter space, an old broken down stove, so don't expect any beautiful pictures of lovely granite countertops and viking appliances. ;) Onto the food!

Tonight's dinner is my eldest's absolute favorite:

Flank Steak with Avocado Salad
 
 
 
What you will need:
 
2 oranges
4 limes
4 cloves of garlic crushed
1/4 cup olive oil
1-2 tsp of salt (depends on your taste)
1 tsp black pepper
2 tsp dried oregano (1 1/2 Tbls if  using fresh)
 
2lbs Flank Steak
 
2 large avocados
1/2 onion
1/4-1/2 cup cilantro
 
Directions:
 
1. Juice the limes and oranges, then whisk in the next five ingredients. You have just created your marinade and salad dressing!
 
2. Pour half of the mixture into a gallon size ziploc bag, add steak, remove air and refrigerate for at least an hour up to overnight. Save remaining marinade for salad.
 
3.  When ready for dinner decide how you want to cook your steak, I prefer to grill the steak. Start your coals and they are ready when they have a layer of ask, and a lovely orange glow. For a nice medium/medium-well, it will take approximately 20 minutes, but watch carefully,
 
4. While the steak cooks you will prepare the salad by slicing the avocados and onion, then gently tossing with the remaining dressing and cilantro.
